Seaweed Brown Rice Noodles Coleslaw

- 4 squares Star Anise Foods Brown Rice Noodles with Seaweed
- 1 1/2 cups Red Cabbage
- 1 cup Carrot
- ¼ cup chopped Cilantro
- 1/3 cup Tahini
- ¾ cup Water
- ¼ cup Apple Cider Vinegar
- 2 tsp Prepared Mustard
- 2 tsp Onion Powder
- ¼ tsp Garlic Powder
- For Noodles: Re-hydrate noodles by soaking in hot boiling water for 4 mins until al dente. Drain & Rinse to avoid Noodles sticking together. Set aside.
- To make Dressing: Blend all ingredients for Dressing in blender/food processor. Set aside.
- Toss together salad ingredients. Serve.
