Vietnamese Cold Noodle Salad with Prawns (Goi Tom)

This is a light, fresh, delicious Vietnamese gluten free noodles salad that takes 5 minutes to make and never fails to delight.

  • Serves 2
  • Preparation time: 5 minutes

Ingredients you will need

  • 2 squares of Star Anise Foods' Gluten Free Noodles - Just Noodles
  • 1/4 pound of cooked peeled prawns
  • 1 lime cut into wedges
  • 1/2 cup of chopped corriander
  • 1/2 cumcumber, thinly sliced
  • 1 red sweet pepper, thinly sliced
  • 1 clove of finely chopped garlic
  • Salt & pepper to taste
  • 1 teaspoon of brown sugar

Preparation

  • Prepare the Vietnamese Brown Rice Noodles as per instructions on the package.
  • In a big salad bowl, squeeze the lime juice, put the sugar, garlic, salt, pepper and mix well.
  • Add noodles, prawns, cucumber, red sweet pepper and mix through.
  • Garnish with chopped corriander.
  • Enjoy!

 

Vegetarian Vietnamese Cold Noodles Salad (Goi Chay)

This is the vegetarian of the Vietnamese Gluten Free Noodle Salad.  Just as delicious.

  • Serves 2
  • Preparation time: 5 minutes

Ingredients you will need

  • 2 squares of Star Anise Foods' Gluten Free Noodles - Just Noodles
  • 1/4 pounds of fried tofu, thinly sliced
  • 1 lime cut into wedges
  • 1/2 cup of chopped corriander
  • 1/2 cumcumber, thinly sliced
  • 1 red sweet pepper, thinly sliced
  • 1 clove of finely chopped garlic
  • Salt & pepper to taste
  • 1 teaspoon of brown sugar

Preparation
