Vietnamese Cold Noodle Salad with Prawns (Goi
Tom)
This is a light, fresh, delicious Vietnamese gluten free
noodles salad that takes 5 minutes to make and never fails to
delight.
- Serves 2
- Preparation time: 5 minutes
Ingredients you will need
- 2 squares of Star Anise Foods' Gluten Free Noodles - Just
Noodles
- 1/4 pound of cooked peeled prawns
- 1 lime cut into wedges
- 1/2 cup of chopped corriander
- 1/2 cumcumber, thinly sliced
- 1 red sweet pepper, thinly sliced
- 1 clove of finely chopped garlic
- Salt & pepper to taste
- 1 teaspoon of brown sugar
Preparation
- Prepare the Vietnamese Brown Rice Noodles as per instructions
on the package.
- In a big salad bowl, squeeze the lime juice, put the sugar,
garlic, salt, pepper and mix well.
- Add noodles, prawns, cucumber, red sweet pepper and mix
through.
- Garnish with chopped corriander.
- Enjoy!
Vegetarian Vietnamese Cold Noodles Salad (Goi
Chay)
This is the vegetarian of the Vietnamese Gluten Free Noodle
Salad. Just as delicious.

- 1 lime cut into wedges
- 1/2 cup of chopped corriander

- Salt & pepper to taste
- 1 teaspoon of brown sugar
